David Grutman’s influence extends far beyond Miami, as Groot Hospitality’s dynamic and inventive restaurants and nightclubs continue to shape the global hospitality landscape. With decades of experience, Grutman has built a portfolio defined by high-energy environments, design-forward spaces, and culturally relevant programming that consistently set industry standards.
Groot Hospitality’s expansion includes West Coast outposts of its most “see-and-be-seen” concepts, including Komodo — the vibrant Southeast Asian hotspot — and Papi Steak, an intimate yet high-octane interpretation of the classic steakhouse. Both restaurants have earned recognition as “Best New Restaurants in Las Vegas.” LIV has also entered the Las Vegas nightlife scene with striking architecture, state-of-the-art production, and an impressive roster of A-list talent. LIV Beach, the brand’s upscale daylife concept inspired by the French Riviera, delivers a chart-topping lineup of EDM and hip-hop talent in a refined poolside setting. Together, Komodo, Papi Steak, LIV, and LIV Beach are located at Fontainebleau Las Vegas, one of the city’s most anticipated resort openings in recent history and named one of TIME Magazine’s “World’s Greatest Places” within its first year.
Beyond Las Vegas, Grutman’s portfolio includes Miami standouts such as Gekkō (in partnership with Bad Bunny), Casadonna (with Tao Group Hospitality), Komodo, celebrity-favorite Papi Steak (with partner David “Papi” Einhorn), and LIV — one of the most iconic nightclubs in the world. Komodo Dallas marked Groot Hospitality’s first expansion outside of Florida, bringing the brand’s distinctive energy to Texas.
Outside of Groot Hospitality, Grutman serves as creative director and co-owner of Prince, the athletics and lifestyle company, and is an investor in several successful consumer brands, including SkinnyDipped, Vacation, and Goodles. He also leads “The David Grutman Experience,” a guest course at Florida International University’s School of Hospitality & Tourism Management focused on the conceptualization and development of hospitality ventures.
Additionally, Grutman is actively expanding into film and television through DGN Studios, his production company dedicated to developing original content and documentaries centered on entrepreneurship, entertainment, and cultural influence.
